Knox Taco Salad
Taco Salad with a Kick
ingredients
- 1 lb ground beef
- 1 lb ground turkey
- 1 onion, diced
- Mushrooms, sliced
- Garlic, diced
- 1 can Kidney beans (drained)
- 2-3 tblsp Cheez Whiz
- Lettuce, shredded
- 2 tomatoes, diced
- Fat free sour cream
- Shredded 2% fat-free cheddar cheese or mexican cheese shredded
- Mild taco sauce
- Fritos (small bag)
- Spray Oil
- 1 packet taco seasoning
- Your Favorite Seasonings

Spray once around the pan and sauté your onion, garlic, and mushrooms slightly. Add ground beef and ground turkey, season, and cook until no longer red/pink. Drain off oil, add beans. Let simmer 5-10 minutes. Add taco seasoning (follow instructions on packet). Let simmer 5-10 minutes. Taste and re-season with your favorite seasonings. I use Goya All-Purpose Seasoning. When the beans have softened, add 2 tablespoons of the Cheez-Whiz. If it’s too much, then add one tablespoon at a time. Integrate into meat and beans by stirring gently. Let simmer 15-20 minutes. Taste and re-season, if necessary.

In a small cereal-sized bowl, get ready to start layering. Begin by adding sour cream to the bottom of the bowl. Next, add your lettuce (washed and cut into strips) to cover. Next add meat mixture (enough to satisfy appetite). Next, if you love cheese like my husband, add your shredded cheese, if not, leave it out. The cheese will begin to melt. On top, add diced tomatoes (washed). Finish it with your favorite taco sauce and crushed Fritos on top.
