Made this based on an appetizer that we had at a New York City restaurant.

ingredients

  • 1 can of chick peas, drained
  • olive oil
  • small garlic clove, minced
  • Kalamata olives, pitted and chopped
  • Sun-dried tomatoes, chopped
  • Salt and Pepper

    1. Drain chick peans and put in food processor.

    2. Add minced garlic

    3. Add olives

    4. Add chopped sun-dried tomatoes

    4. While pulsing the food processor add olive oil until desired consistency

  • 6

    5. Taste the bean dip, add salt and pepper to taste

  • 7

    6. Add as many olives as you like ... bean dip should taste “olivey” not like beans

  • 8

    7. Put in a small bowl, cover and refrigerate. Flavors will enhance over time.

notes

If you don't have sun-dried tomatoes you can add a couple of tablespoons of tomato sauce!
