Fettuccine Hungry Girlfredo - Light and Healthy Alfredo
This is the guild-free recipe of the century. Deliciously fattening Fettuccine Alfredo has been turned into a dish you could eat every day. Healthy and flavorful.
ingredients
Fettuccine Base- 1 Package Tofu Shirataki Fettuccine Shaped Tofu Noodles
- 1/2 Wedge The Laughing Cow Light Cheese
- 1 teaspoon Fat Free Sour Cream
- 2 teaspoons Kraft Reduced Fat Parmesan Cheese
- 1/4 cup Steamed Veggies: broccoli florets, red pepper chunks, asparagus, zucchini
- dash Salt & Pepper
- dash garlic powder
- dash chili powder
- dash cayenne powder
- dash ground nutmeg
- 1/2 teaspoon minced garlic

Rinse fettuccine noodles VERY well. Microwave them for one minute, then drain them and pat dry. Add cheeses and sour cream. Mix thoroughly. Microwave to help melt cheese further, and mix some more. Add salt and pepper to taste.

Variation: Skip the sour cream, up the Laughing Cow to 2 wedges, add a clove of minced garlic and a teaspoon of dried parsley. Add 1 tablespoon of grated Parmesan cheese, add 1/2 tablespoon of Brummel & Brown margarine.
