Pork or Chicken Satay
ingredients
- 2 cloves garlic
- 1/2 cup chopped green onion
- 1 cup roasted peanuts
- 2 Tbsp. lime juice
- 1 tbsp grated ginger
- 2 Tbsp. honey
- 1/2 cup soy sauce
- 2 Tbsp. chopped cilantro
- 1 tsp. red pepper flakes
- 1/2 cup chicken broth
- 1/4 cup butter (melted)
- 2lb. pork or chicken breasts, cut into 1" cubes

In a blender or food processor, combine all ingredients except the meat.

Place marinade in a resealable bag with the meat.

Marinade overnight

Remove meat & thread onto skewers.

In a small saucepan, boil marinade for 7 minutes.

Set aside to serve as a dipping sauce.

Grill meat over medium heat until well browned; baste with marinade.
