  • • 8 baking potatoes
  • • 8 oz. sour cream
  • • 4 oz. Treasure Cave blue cheese
  • • 24 oz. extra sharp cheddar cheese
  • • 24 oz. medium cheddar cheese
  • • salt & pepper
  • • garlic powder
  • • 1/2 tub Smart Balance spread
  • • small amount of milk

    1. Bake potatoes 45 minutes to one hour at 350 degrees

    2. Slice cooked potatoes in half lengthwise and scoop out.

  • 3

    3. Set aside a portion of cheddar cheeses.

  • 4

    4. Mix together potato meat with other ingredients with hand mixer.

  • 5

    5. Fill potato skins with the mixture.

  • 6

    6. Sprinkle extra cheddar cheeses on top.

  • 7

    7. Bake in oven until cheese is melted and browned.
