Cashew Brittle
Easy microwave Cashew Brittle
ingredients
- 1 cup Sugar
- 1 1/2 cup cashew pieces
- 1/2 cup light corn syrup
- 1 Tbs- butter
- 1 tsp vanilla
- 1 1/2 tsp baking soda

spray a cookie sheet well with Pam and set aside.

Mix sugar nuts and corn syrup in a microwave safe glass bowl (I recommend a bowl with a handle) Microwave on high for three minutes. Take out and mix well, then put back in the microwave for an additional 4 minutes. Remove from microwave, add baking soda, vanilla and butter, mix well. Pour onto prepared cookie sheet let harden then break into pieces.

The times above could vary based on the strength of your microwave. If your brittle comes out chewy you’ll need to add additional time. If it’s too dark then you’ll need to reduce the time. Make a note of the time that you used for future reference.
