Gluten Free Meatloaf
It’s great meatloaf...just without gluten.
ingredients
- 1 - 1 1/2 lb. ground beef
- 1/4-1/3 cup diced onion (or to taste)
- 1 tsp. salt (we put in garlic-herb seasoning because Kevin hates to add salt to anything)
- 1 - 1 1/2 cups pre-cooked potatoes, slightly mashed
- 1 egg
- 2-3 tsp garlic powder or minced garlic
- Options:
- 1/2 cup chopped sun-dried tomatoes and/or left over mashed or diced vegetables
directions
Mix everything together with hands. Don’t over-mix or the meatloaf could get tough. Bake at 350 for 1 hour. Spread ketchup over the top for the last 15 minutes.

Mom came to visit us in November this year (2009) and looked up a gluten free recipe for me. It's delicious.
