Chicken Cacciatore
ingredients
- 1 1/2 pounds boneless, skinless chicken thighs (or breasts)
- 1 jar (1 pound 10 ounces) tomato pasta sauce
- 2 small sweet peppers (red/yellow/orange/green), sliced
- 1 medium onion, sliced
- 3 Tbsp dry sherry or chicken broth
- 1/2 tsp garlic powder with parsley
- 1/4 tsp ground black pepper
directions
- 1
Arrange chicken in slow cooker. Add pasta sauce, peppers, onion, sherry, garlic, and black pepper.
- 2
Cover and cook on HIGH for 4-6 hours or until chicken is thoroughly cooked.
- 3
Serve with hot cooked white rice.

Notes:
- 5
We use for Ragu Old World Style Pasta Sauce but any tomato based pasta sauce would probably work.
- 6
Depending on the slow cooker, the chicken can be ready in 3-4 hours when cooked on HIGH.
- 7
Our slow cooker must be hotter than those used in the recipes. We never cook for 4 hours on HIGH, but use your judgement.
notes
We like making a slow cooker recipe on Sunday so we can have leftovers during the week. Recipe from Donna Conrad. Her mother is Kay Blanchette's sister.
