Old Raj's BBQ Lemon Chicken

ingredients
- 12-15 chicken thighs, bone in, skin on
- 1 Tbsp pepper flakes
- 2 lemons for juicing
- lemon pepper, a little more than when it looks just right
- 1 tsp soy sauce
- 2 Tbsp olive oil
- garlic powder, 2 good shakes from the Costco size bottle
- Tapatio or Chulula brand salsa sauce (or some other, if these are too spicy) 6 hard shakes

Put chicken in a big mixing bowl. Add lemon pepper first, the chicken should be pretty coated with this stuff. This may seem like it will be really tart, but it mellows as it cooks, so don’t be stingy.

Juice the lemons over the chicken. Add the rest of the ingredients and mix together with your hand until each thigh is evenly covered. If you think you put too much lemon pepper or it looks a little dry at this point add some olive oil.

Let it sit a minimum of 15 minutes.

For cooking this, you need patience. Make sure coals are white, evenly distributed throughout the bottom of the BBQ. One layer of coals is enough, you want this to cook, not turn into Old Raj’s burned lemon chicken jerky. You can always add more if you need it. Have a squirt bottle with water available to spray any flare-ups.

Set up your grill with the vents only slightly open. I use a Weber and close the vents on the grill totally and leave the vent on the cover 1/2 open. If you have a gas grill, I don’t know what to tell you. Maybe, set your knobs to chicken thigh.

Place chicken on the grill skin side up to start. Put on the lid. Check in 5 minutes to see if there are any problems with hot spots. If there are, fix it by moving chicken, moving coals, or some other way. This may also be the moment when you realize one layer of coals was enough and that lighting the whole bag of coals was too much. You can still save your meal by throwing 1/2 a bag of ice on the grill.

Now that you know your setup is right, put on the lid and don’t peek for 15 minutes. After 15 minutes, turn the chicken and rotate spots on the grill as needed. If you see flames when turning the chicken, spray them with water from your water bottle (you probably forgot that you needed this). You can check the chicken every 10-15 minutes, rotating and turning as necessary.

They should be done in 40 -45 minutes. ENJOY!
