Chicken Fruit
ingredients
- 1 Can Mandarin Orange
- 1 Can Pineapple Tidbits
- 1 Cup Dates -- pitted
- 1 Each Green Pepper -- slivered
- 1/4 Cup Almonds -- sliced
- 1 1/2 Each Lemon
- 1 Can Chicken Broth
- 1 1/2 Tablespoons Onion -- minced
- 1/2 Teaspoon Curry
- Pinch Salt
- Pinch Pepper
directions
Strain fruit juices, squeeze 1 1/2 lemons into juice, add chicken broth, minced onions, curry, salt and pepper.
Bring liquid to a boil and simmer for 15 minutes.
Bake chicken in shallow pan; (pinch of salt, pepper and garlic salt) about one hour.
During last 20 minutes baste chicken with spoonfuls of sauce.
Put chicken and heated platter.
Thicken sauce with cornstarch. Stir fruit and almonds into the sauce.
Pour sauce over chicken.
