Zuchini Bread
ingredients
- 170 mL oil
- 3 cups of sugar
- 3 cups zuchini, shredded thickly
- 2/3 cups of water
- 4 eggs
- 1 1/3 cups of white flour or 2 cups of whole wheat flour
- 2 tsp baking soda
- 1 1/2 tsp salt
- 1/2 tsp baking powder
- 1 tsp cinnamon
- 1 tsp cloves
- 2 tsp vanilla
- 2/3 cup of walnuts
- 2/3 cups raisins
directions
Preheat oven to 350. Grease 3 bread pans. Mix sugar and oil in a large mixing bowl using a wooden spoon. Add zucchini, water, and eggs mixing after each ingredient. Sift flour into dry ingredients and add in small batches to mixture, mixing well after each. Finally add vanilla, walnuts, and raisins. Place in bread molds and bake for 1 hour. Allow to cool for 5 minutes before removing from pans.
