Moist and Low Fat Banana Bread

I always end up buying too many bananas, so this is my old standby for getting rid of them -- in an amazingly delicious way!

ingredients

Wet Ingredients
  • 2 eggs
  • 1/2 cup sugar
  • 4 small, very ripe bananas, mashed
  • 1/4 cup applesauce
  • 1/3 cup milk
  • 1 tbsp vegetable oil or butter (DON’T SKIP)
  • 1 tbsp vanilla extract
Dry Ingredients
  • 1 3/4 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg

    Preheat oven to 350 degrees (175C).

    Grease and flour a loaf pan.

    Mix wet ingredients (eggs, sugar, bananas, applesauce, milk, vegetable oil or butter, vanilla) in a large bowl.

    Sift dry ingredients through a sieve into wet ingredients (flour, baking powder, baking soda, salt, cinnamon, nutmeg), mixing thoroughly, in another bowl.

    Add dry ingredients to wet ingredients.

    Fold until just moistened. The batter will be thick and lumpy.

    Pour into pan(s) and bake for 45 minutes.

    Test and keep baking 5 minutes at a time until the batter has all set, and a knife or toothpick inserted come out relatively clean. I like it a little gooey (but not liquid), but bake to your tastes.

Only has about 225 calories per 1/12th serving. Most quickbreads have almost 400!
