Gina's Cheesecake
ingredients
- Crust
- 1 1/2 cups crushed graham crackers, shortbread cookies, gingersnaps or chocolate wafers
- 4 tablespoons melted butter
- 3 tablespoons sugar
- Filling
- 1 8 oz package cream cheese, softened
- 1/2 cup sugar
- 1 tablespoon lemon juice
- 1/2 tsp vanilla
- Dash salt
- 2 eggs
- Topping
- 1 cup dairy sour cream
- 2 tablespoons sugar
- 1/2 tsp vanilla

Mix together all ingredients and press into pan. (Or use an unbaked ready prepared crust)

Beat cream cheese till fluffy; gradually blend in 1/2 cup sugar, lemon juice, 1/2 tsp vanilla and salt. Add eggs, one at a time, beating well after each. Pour filling into crust. Bake in slow oven 325° for 25 to 30 minutes or till set. Combine remaining ingredients and spoon over top of pie. Bake 10 minutes longer. Cool. Chill several hours. Top with fruit if desired.
