Jess's Roasted Chicken
ingredients
- 1 chicken (5 lbs or smaller)
- Kosher salt
- Pepper
- 1 bunch large thyme (optional)
- 1 lemon, halved
- 1 head garlic cut in half
- 2 tablespoons butter melted
- 1 medium onion thickly sliced

Preheat oven to 425.
- 2
Remove chicken giblets.

Rinse chicken inside and out, and pat outside dry.

Place chicken in roasting pan.

Stuff cavity of chicken with salt, pepper, thyme, lemon halves, and garlic.

Brush outside of chik with butter and sprinkle again with salt and pepper.

Scatter onions (and any other veggies/potatoes etc) around chicken.

Roast for 90 minutes (less for smaller bird) or until juices run clear when you cut between thigh and leg.
