Cool Summer Gazpacho Salad

ingredients
- 1 lg Fresh Pineapple
- 1 lg Tomato Chopped
- 1 Sm Cucumber, thinly sliced
- 1/2 c. Chopped Green Onion
- 2 tbsp Chopped Parsley

Cut Pineapple in half, lengthwise through crown, leaving shells intact.

Remove fruit. Core and dice.

Toss with tomato, cucumber, green onion, and parsley. Refrigerate.
