Pecan Coconut Layer Bars
ingredients
- Crust
- 1 package yellow cake mix
- 5 tablespoons butter, melted
- 1 egg
- Topping
- 3/4 cup light corn syrup
- 1/4 cup packed brown sugar
- 2 eggs
- 1 teaspoon vanilla
- 1 cup chopped pecans
- 3/4 cup sweetened flaked coconut

Preheat oven to 350 degrees. Line a 13 x 9 inch pan with foil and spray with cooking spray.

For crust, combine cake mix, butter, and 1 egg in large bowl until blended (batter will be stiff). Press batter into prepared pan; bake 15 minutes.

For topping, combine corn syrup, brown sugar, 2 eggs and vanilla in another large bowl until well blended. Stir in pecans and coconut. Spread mixture evenly over partially baked crust.

Bake 25 minutes or until top is bubbling and edges are lightly browned. Cool completely in pan on wire rack.
