Pumpkin Roll Cake
ingredients
- 3 eggs
- 1 cup sugar
- 2/3 cup pumpkin
- 1 TBS lemon juice
- 3/4 cup flour
- 1 tsp bking powder
- 2 tsp cinnamon
- 1 tsp ginger
- 1/2 tsp nutmeg
- 1/2 tsp salt
- 1 cup chopped nuts
- FILLING
- 1 cup powdered sugar
- 8 oz cream cheese
- 4 TBS butter
- 1 tsp vanilla

Beat 3 eggs on high speed for 5 minutes and beat in 1 cup sugar slowly, stir in 2/3 cup pumpkin and 1 TBS lemon juice.

Mix together 3/4 cup flour, 1 tsp baking powder, 2 tsp cinnamon, 1 tsp ginger, 1/2 tsp nutmeg, 1/2 tsp salt and fold into pumpkin mixture.

Spread in greased, floured sheet cake pan, top with 1 cup chpped nuts.

Bake at 375 for 15 minutes.

Turn onto paper towel sprinkled with powdered sugar, roll towel and cake together and let cool.

Unroll and spread filling on cake and roll up.

Wrap in foil and store in refrigerator.
