DeBiasio Wedding Soup
ingredients
- Meatballs:
- 1 lb. ground beef
- 3 Tbsp. Italian grated cheese
- 2 Tbsp. chopped parsley
- 6 Tbsp. olive oil
- 3 eggs
- 3/4 cup plain bread crumbs
- 1 Tbsp. salt
- 1 Tbsp. garlic powder
- 1/4 cup water
- Black pepper
- Soup:
- 1 whole chicken; cut up
- 1 lb. carrots
- 6 - 7 celery stalks
- Frest spinach
- Orzo pasta

1. Fill kettle with water and a little salt; enough to cover chicken. Boil until chicken is fully cooked. Keep taking foam off while simmering.

2. Cut up very fine: carrots and celery. Saute in pan and drain.

3. When chicken is completely cooked, debone, pull apart meat with forks, strain broth, then put chicken, carrots and celery back in broth.

4. Add chicken boullion to taste.

5. Combine all ingredients for meatballs. Make very small balls and brown in skillet in olive oil.

6. Add meatballs to soup. Add spinach and cooked orzo pasta. Let simmer.
