Chopped Chicken Livers
ingredients
- 1/2 cup shortening
- 2 onions, sliced
- 1 pound chicken livers, washed and drained
- 7 whole, hard boiled eggs
- 1 1/2 teaspoons salt
- 1/4 teaspoon freshly ground black pepper
- 1 teaspoon chicken fat

Melt 1/4 cup of shortening in skillet. Add onions and saute for 10 minutes, stirring frequently.

Remove onions and set aside. Melt remaining 1/4 cup of shortening in the same skillet. Saute livers for 10 minutes, stirring occasionally.

Grind onions, livers and egg, or chop very finely in a wooden bowl.

Add salt and pepper and mix well.

Chill.

If served as an appetizer, serve on a bed of lettuce.

Pour a teaspoon of rendered chicken fat over each portion.
