Orange-Wild Rice Salad with Smoked Turkey
This recipe is from a demo at a grocery store. Yummy!
ingredients
- 4 cups cooked wild rice blend
- 1 cup orange sections (about 3 cups)
- 1/2 cup diced celery
- 1/3 cup dried sweet cherries or sweetened dried cranberries
- 1/2 pound Jennie-O Turkey Store Home-style Hickory Turkey Breast
- 1/4 cup orange juice concentrate, thawed, undiluted
- 2 tablespoons lemon juice
- 2 tablespoons water
- 1 tablespoon Dijon mustard
- 1 1/2 teaspoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon ground pepper
directions
Place rice, oranges, celery, cherries and turkey in a large bowl. Combine orange juice concentrate and remaining ingredients; stir well with a whisk. Pour over rice mixture and toss well. Cover and chill for 1 hour.
