- 6 ounces sugar snap peas or snow peas, trimmed
- 1 tbsp. fresh lemon juice
- 1/2 tsp. salt
- 1/8 tsp. freshly ground pepper
- 3 tbsp. olive oil
- 1 pound smoked trout fillets
- 2 bunches watercress, tough stems removed
- Chopped chives, for garnish (optional)
