Red and Black Bean Salad
ingredients
- 1 8oz can red beans (drained)
- 1 8oz can black beans (drained)
- 1 8oz can whole kernel corn (drained)
- 1/2 cup red onion (diced)
- 1/2 cup green pepper (diced)
- 1 clove garlic (diced)
- 1/2 tsp salt
- 1 TBS sugar
- 1/4 cup salad oil (canola or similar)
- 1/4 cup vinegar (cider or red)
- 1 tsp chile powder
- 1 tsp cumin
- 2 TBS fresh cilantro or parsely
- 2 TBS fresh squeezed lime juice

Combine drained beans, corn, onion, pepper together in a bowl.

Mix remaining ingredients and pour over bean mixture.

Can be made a day in advance.
