Parmesan Chicken and Rice
I am sure Johanna got this recipe from a friend (TBD). Good for kids!
ingredients
- 1 tablespoon olive oil
- 1/2 cup chopped onion
- 1 teaspoon minced garlic
- 1/2 teaspoon dried thyme
- 8 ounce package pre-sliced mushrooms
- 3/4 pound boneless chicken breast cut into bite size pieces
- 1/2 cup dry white wine
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 cup instant rice
- 1 cup chicken broth
- 1/2 cup fresh grated Parmesan
- 1/4 cup fresh chopped parsley

Heat oil in a skillet. Add onion, garlic, thyme and mushrooms: Saute for 5 minutes or until onion is tender. Add chicken, saute 4 minutes or until chicken is lightly brown. Add wine, salt and pepper; cook until liquid is almost evaporated.

Stir in rice and broth. Bring to a boil, cover and reduce heat, and simmer 5 minutes or until liquid is absorbed. Stir in cheese and parsley.
