Maritime Cod Cakes
ingredients
- 2 cups cooked codfish, shredded (salt cod gives good flavour)
- 3 cups mashed potatoes
- 1 onion, finely chopped
- 1 egg, well beaten
- 1/4 cup butter, melted
- Salt & pepper, to taste
- (if using salt cod, don’t add salt)

Mix all ingredients and form into patties. Dip in beaten egg (optional).

Fry in a good hot pan using just enough fat to keep them from burning. Turn to cook other side and serve piping hot.
