ingredients

  • 3 cups flour
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1 teaspooon allspice
  • 1 cup vegetable oil
  • 1 cup sugar
  • 3 eggs
  • 16 oz canned pumpkin
  • 1 cup chopped pecans

    Preheat oven to 350°F

    Grease and flour a 10 inch tube pan. Sift together flour, salt, baking powder, baking soda, cinnamon, nutmeg and allspice. Set aside. In a mixer with medium speed, mix salad oil, and sugar throughly. Add eggs one at a time mixing well after each addition. Add pumpkin and mix thoroughly. Turn mixer to lowest setting and blend in sifted dry ingredients. Stir in chopped pecans. Pour batter into prepared pan.

    Bake at 350°F for 1 hour.

For a little extra flavor you can ice this with a Cream Cheese icing.
