The unhappy chef: Apple-chocolate chip pancakes
Nothing turns an unhappy chef into a bright cheerful ball of joy more than a delicious, healthy breakfast of apple chocolate chip pancakes
ingredients
- 2/3 cup whole wheat flour
- 2/3 cup unbleached all-purpose flour
- 1/3 cup cornmeal
- 1 Tbsp baking powder
- 1 tsp ground ginger
- 1/2 tsp baking soda
- 2 cups nonfat plain yogurt
- 3/4 cup fat free egg substitute
- 3 cups semi sweet chocolate chips
- 2 Tbsp canola oil
- 1 apple, peeled, cored and coarsely grated

Mix flours, cornmeal, baking powder, ginger, baking soda, yogurt, egg substitute, chocolate chips, and oil in a large bowl until combined. Fold apple into batter.

Coat large non-stick skillet with cooking spray and heat over medium heat.

Spoon 2 to 3 tablespoons of the batter onto skillet. Cook 2 minutes or until bubbles appear on surface. Flip and cook until lightly browned, about 2 minutes. Repeat with remaining batter
