Lemon Chicken Soup
This one is a curious entry in Mom’s recipe box. I can remember first tasting lemon chicken soup at a restaurant here in Anchorage called the Greek Corner. I can remember trying to recreate it at home, and it took a couple tries to get it right. This is apparently the final version of the soup... but the recipe is definitely not written in Mom’s handwriting. Who recorded the final version? Andrew? Sarah? Nathan? I know it’s not my handwriting....
ingredients
- 1 can chicken broth
- 4 chicken breasts
- 2 lemons
- 2 1/4 cups rice
- 1 diced celery stock
- 1/4 cup onion
- pepper
- lemon pepper
- basil
directions

Zest lemons into pan. Juice lemons into same pan and add chicken breasts. Add lemon pepper and allow chicken to marinate in lemon juice mixture for at lest 20 minutes.

In a stock pot, pour in broth, celery stock, onion, pepper, and basil and allow to heat to boiling. Turn down heat to simmer and add marinated chicken and lemon juice mixture. Cook chicken throughly. Add rice, allow to heat, and serve.

Try this soup when you're feeling a little under the weather. Something about the chicken soup combined with the lemon really helps with a cold....
