Foolproof Frittatas
Frittatas are easy and look beautiful (much tastier than omelettes!). You can use a wide variety of ingredients.. I’ve given you a few ideas here. Go on... experiment!
ingredients
FOR ALL VERSIONS- INGREDIENTS FOR ALL VERSIONS
- 1 Tbsp. vegetable oil
- 8 eggs
- 1/4 cup milk
- 1/2 tsp. salt
- 1/4 tsp. pepper
- STEP 1: 1 onion, sliced; 1 carrot thinly sliced, 2 garlic cloves minced, 1/2 tsp dried Italian herbs;
- STEP 2: 1 cup cooked short pasta (3/4 cups uncooked), 1 1/2 cups brocolli florets, dash hot pepper sauce.
- STEP 3: 1/3 cup grated Parmesan cheese.
- STEP 1: 1 onion, sliced; 2 garlic loves minced.
- STEP 2: 1 sweet red pepper, thinly sliced, 4 tsp. chopped fresh dill or 1 tsp. dried dillweed.
- STEP 3: 3/4 cup crumbled feta cheese, 1 cup chopped tomatoes, 1 package frozen chopped spinach (thawed and drained).
- STEP 1: 1 onion, chopped, 1/2 cup diced veggie ham or bacon
- STEP 2: 3/4 cup shredded Swiss or Cheddar Cheese
- STEP 3: 2 green onions, minced
- STEP 1: 1 onion, chopped
- STEP 2: 1 Tbsp. chopped fresh parsley; 4 tsp. chopped fresh dill or 1 tsp. dried dillweed
- STEP 3: 2 oz (60 g) light cream cheese cubed
- ASPARAGUS & LEEK
- STEP 1: 2 leeks (white parts only) or 1 onion, chopped
- STEP 2: 1 potato, peeled cooked and diced; 8-10 stalks asparagus washed and trimmed;
- STEP 3: 3/4 cup shredded Edam or Havarti cheese

1. In a 9 or 10 inch nonstick ovenproof skillet, heat 1 Tbsp. vegetable oil over medium heat. Add ingredients listed in STEP 1.

2. In a large bowl, which together 8 eggs, 1/4 cup milk, 1/2 tsp. salt and 1/4 tsp. pepper; Add ingredients listed in STEP 2. Pour into skillet, stirring to combine. Reduce heat to medium-low.

3. Sprinkle with ingredients listed in STEP 3. Cook for 10 minutes or until bttom and side are firm yet top is still slightly runny. Broil for 3 to 5 minutes or until golden brown and set. Slice into wedges.

Frittatas keep well in the fridge for up to 2 days. You can use a wedge of frittata in a wrap or or pita!. You can use a regular saucepan - just wrap the handle in aluminium foil before broiling.
