Mashed Potato Cakes

Leftover mashed potatoes restyled with bacon, onion and cheese and coated with crispy panko bread crumbs.

ingredients

  • 3 cups cold mashed potatoes
  • 3 strips of bacon, diced
  • 1/2 cup onion, diced
  • 1 clove garlic, minced
  • 1 egg, beaten
  • 1 cup Panko bread crumbs
  • 1 cup shredded cheese (Asiago, cheddar, swiss, Parmesan, etc)
  • Olive or canola oil for frying
  • Salt and Pepper to taste

directions

In large skillet, cook bacon until almost done then add onion and garlic and saute until translucent. With slotted spoon remove bacon and onion to medium sized bowl. Add cold mashed potatoes, egg and cheese. Using about 1/2 cup of potato mixture form into a patty then coat with bread crumbs. In same skillet over medium high heat, cook patties until crisp on both sides. Season with salt and pepper.

notes

The patties will be rather soft. If you have time prepare them ahead and chill in refrigerator until ready to cook.
