Premature Aglio y Olio, Or I Aglioed your Olio so fast it almost doesn't count!
This is the ultimate in quick Aglio y Olio. Its fast, its good, and usually you have the ingredients around the house. If you are of Italian decent that is!!
ingredients
- 4-5 Tbs EVOO the better the quality the better the dish
- 3-4 Tbs Butter
- 2 Tbs Granulated garlic
- 2-3 Cloves of garlic sliced
- 1-2 tsp Crushed red pepper
- Salt to taste
- Pepper to taste (about 10 turns)
- 1 Cup Chicken broth, stock, or bullion
- 1/2 cCup white wine never hurt, but isn’t necessary (gives you an excuse to open the bottle)
- 1 Tomato diced
- 1 Lemon quartered
- Parmesan or Romano grated “you try to put cheddar in this dish my cousin Vinnie will show up at your house and and make you beg him to leave capishe! and I have 2 cousin Vinnie’s’...whadayou gonna do now tough guy”
- Pasta: Penne, linguine...whatever you got

In large frying/saute pan put your olive oil and butter. Heat on medium heat until butter is melted. Too hot and the butter will burn and you are SOL start over.

Once the butter is melted add the spices and the garlic and saute for 2-3 mins.

Turn the heat to med-high wait one minuet, and add the wine and chicken broth.

Reduce this on medium heat for 10 mins while you start the pasta water.

When the pasta is halfway cooked squeeze three quarters of the lemon into the pan and turn the heat to low.

Simmer until pasta is ready.

When pasta is ready drain and place into large pasta bowl.

Add mixture from pan, tomato, and 1/4 cup grated cheese.

Toss it off until everyone is happy. Kinda like an Italian happy ending!

Serve garnished with additional cheese and lemon wedge!!!

Its Olie Olia with out the water and parsley. Soooo good!
