LENTIL SOUP
ingredients
- 1 TBL olive oil
- 1/2 cup chopped onion
- 1/4 cup chopped celery
- 1/4 cup chopped carrot
- salt and pepper
- 2 large cloves garlic-minced
- 1 tsp curry powder (adjust up to taste)
- 6 cups vegetable or chicken stock
- 1 cup dried lentils
- 1/3 cup barley

Heat oil in large pot

Add onion/celery/carrots

Saute until tender-NOT BROWN

Stir in garlic...cook 1 minute

Stir in curry powder

Add stock...bring to a simmer

Stir in lentils and barley

Bring to a boil- lower heat to simmer

Cook 1 to 1 1/2 hours

(until lentils and barley are tender)

Add additional stock or water during cooking, if necessary.
