SHRIMP MARINARA
This was my first “company” dinner after Uncle Howie and I got married in 1970. It’s still a favorite!
ingredients
Shrimp- 1 1/2 lb extra large shrimp (3 lbs unshelled)...clean and devein
- 2 minced onions
- 6 TBL olive oil
- 1 lb 13 oz can Italian style tomatoes
- 1 1/4 tsp salt
- 2 tsp oregano
- 1/8 tsp basal
- 1/8 tsp pepper
directions
For Shrimp
Boil water...put in shrimp...remove when shrimp turn pink
For Marinara Sauce
- 1
Saute onions in olive oil,

add tomatoes (break up slightly),

add tomato sauce, salt, oregano, basal, and pepper.

Cover and simmer 20 minutes.

Add shrimp.

Simmer until hot (about 10 minutes).

Good served over rice.
