Rhubarb Struesel Bread
ingredients
- 1 1/2 cups Brown Sugar
- 1/2 cup Oil
- 1 Egg
- 1 cup Buttermilk
- 1 tsp Vanilla Extract
- 2 1/2 cups AP Flour
- 1 tsp Baking Soda
- 1 tsp Salt
- Streusel:
- 1/2 cup Sugar
- 1/4 tsp Cinnamon
- 1 Tbsp Butter, cold
- 1 1/2 cups chopped Rhubarb
- 1/2 cup chopped Walnuts or Pecans

In mixing bowl, combine brown sugar and oil. Add egg and mix well. Beat in buttermilk and vanilla. Combine the flour, baking soda and salt; stir into brown sugar mixture just until combined. Fold in the rhubarb and nuts. Pour into two greased loaf pans.

For streusel, combine the sugar, cinnamon and butter until crumbly; sprinkle over batter. Bake loaves at 350-degrees until they test clean with a toothpick. Cool, remove from pans and enjoy.
