Blackened Tilapia
ingredients
- 4 tilapia fillets
- 1 tablespoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon cayenne
- 3/4 teaspoon white pepper
- 3/4 teaspoon black pepper
- 1/2 teaspoon thyme
- Salt to taste
- 1/2 cup butter, melted
- Lemon wedges

Preheat large heavy skillet until very hot. Mix dry ingredients in a bowl and set aside.

Dip fillets in butter, and then in dry mixture.

Place in hot skillet and cook 2 minutes per side until fillets are blackened. Serve with lemon wedges.
notes
Cayenne pepper can be omitted if too spicy. Fish will give off a lot of steam and smoke.
