Candy Bar Cookies
ingredients
- 1 c. packed brown sugar
- 2/3 c. butter or margarine
- 1/4 c. dark or light corn syrup
- 1/4 c. peanut butter
- 1 tsp. vanilla
- 3 1/2 c. quick-cooking rolled oats
- 2 c. semi-sweet chocolate chips
- 1 c. butterscotch chips
- 2/3 c. peanut butter
- 1/2 c. chopped nuts
directions
Preheat oven to 375 degrees. Grease a 9 X 13-inch baking pan with no-stick cooking spray; set aside. In a medium saucepan, cook and stir brown sugar, butter, and syrup over medium-low heat until combined. Remove from heat; stir in the 1/4 cup peanut butter and vanilla until smooth. Place oats in a large bowl; pour brown sugar mixture over oats. Stir gently until combined. Press mixture evenly on bottom of prepared 9 X 13-inch baking pan. Bake 10-12 minutes or until edges are light brown. Meanwhile, in same medium saucepan, cook and stir chocolate and butterscotch chips together over low heat until melted. Stir in the 2/3 cup peanut butter until mixture is smooth. Slowly pour mixture over hot crust. Spread evenly; sprinkle with peanuts. Cool in pan on rack for several hours or until chocolate layer is firm. If necessary, chill until chocolate is set. When firm, cut into bars and enjoy. Makes 48 bars. For 32 bars: prepare as above except use an 8 X 12-inch baking pan.
