Momma Kim's Potstickers (Mandu)
ingredients
- Ingredients: (these are all approximations since momma just kind of throws stuff in)
- 1/2 lb ground pork
- 1/2 lb tofu (medium/firm)
- 1/2 lb bean sprouts
- 1 zucchini
- 1/2 onion diced small
- 3 cloves of garlic
- 1 tsp of salt
- 1 tsp of pepper
- 1/2 tsp fresh ground ginger
- a touch of sesame oil to taste (optional)
- 1 egg
- 1 package of pot sticker wrappers

1. Drain the tofu by squeezing it in a cheese cloth or pushing it through a strainer. Peel the zucchini, remove the seeds, and drain as well with a cheese cloth. Dice the drained zucchini into small bits.

2. Combine the pork, tofu, bean sprouts, diced zucchini, diced onion, garlic, salt, pepper, and ginger. Mix well.

3. Whip the egg in a small bowl with a fork.

4. Take a wrapper and brush half the outside edge with egg wash. Place a tablespoon of the meat mixture in the center and fold in half. Pinch the outside edges. Repeat.

Once completed you can freeze these for longer storage. Some preparation options:

1. Simply boil in water. Serve with soy sauce

2. Fry them(Duh everything tastes better fried). You can either deep fry them or fry them in a pan with just a shallow layer of oil. Serve with a side of soy sauce or gyoza sauce.

3. Won ton soup. Boil in a pot of chicken stock, mix in snow peas, bamboo shoots, salt, pepper, and a touch of garlic for a quick appetizer.
