Tasty accompaniment to Filipino barbecue

ingredients

Dressing
  • 2 1/2 – 3 TBS fresh lime juice
  • 2 TBS Fish Sauce (my favorite is Vietnamese Nuoc Mam)
  • 1 TBS and 1 tsp sugar
  • 1 TBS rice vinegar
  • 1 1/2 tsp Asian dark seseme oil
  • 1 1/2 tsp of minced ginger
  • 1 tsp minced lemongrass, inner white bulb only (can be optional)
  • A pinch of chili pepper or chili sauce to taste
Salad
  • 10 cups of julienned vegi and fruit (don’t need all of them, but more you add, more texture):
  • • Napa cabbage or green lettuce or other leafy lettuces)
  • • Endives
  • • Red peepers
  • • Green papayas, snow peas
  • • Cucumber
  • • Scallions
  • • Jicama
  • • Carrots
  • • Raddish
  • • Mung bean sprout
  • 1/2 Cup of chopped cilantro
  • 2 1/2 ounces of roasted peanuts (or chopped 1/2 cup)

Combine all ingredients and serve.
