Southeast Asian Slaw
Tasty accompaniment to Filipino barbecue
ingredients
Dressing- 2 1/2 – 3 TBS fresh lime juice
- 2 TBS Fish Sauce (my favorite is Vietnamese Nuoc Mam)
- 1 TBS and 1 tsp sugar
- 1 TBS rice vinegar
- 1 1/2 tsp Asian dark seseme oil
- 1 1/2 tsp of minced ginger
- 1 tsp minced lemongrass, inner white bulb only (can be optional)
- A pinch of chili pepper or chili sauce to taste
- 10 cups of julienned vegi and fruit (don’t need all of them, but more you add, more texture):
- • Napa cabbage or green lettuce or other leafy lettuces)
- • Endives
- • Red peepers
- • Green papayas, snow peas
- • Cucumber
- • Scallions
- • Jicama
- • Carrots
- • Raddish
- • Mung bean sprout
- 1/2 Cup of chopped cilantro
- 2 1/2 ounces of roasted peanuts (or chopped 1/2 cup)
directions
Combine all ingredients and serve.
