Spinach Artichoke Cheese Fondue
A hit at the Good Food, Good Friends annual holiday feast! Inspired by the Melting Pot, Somerville, NJ
ingredients
- 1/2 cup light beer
- 1/2 chopped cooked spinach
- 1/2 cup chopped artichoke hearts (drained)
- 1 clove crushed garlic
- 8 oz. chredded cheddar cheese
- 5 turns of the pepper mill
- 3 cups cubed bread (french, rye or pumpernickel)
- tortilla chips (optional)

In a medium saudepan, heat beer on high heat. Add spinach, artichoke hearts and minced garlic. Stir with fork.

Slowly add cheddar cheese. Whip continuously with fork. Continue to add cheese. Keep whipping until your cheese is a “warm honey” consistency.

Add pepper. Turn heat down to low.

Stir with fork until consistency is uniform. Transfer to fondue dish.

Serve with bread & tortilla chips.

Steve recommends an extra splash of beer for a smoother consistency! Doubles easily to feed the entire crew.
