Chile Con Carne
ingredients
- 1 lb beans washed and drained (1/2 red kidney beans and 1/2 pinto beans)
- 6 cups of water
- 2 onions chopped
- 1 garlic clove minced
- 2 lb of lean ground beef
- 3 tsp of salt
- 1/4 tsp of pepper
- 2 tsp chili powder
- 1/4 tsp crushed red pepper
- 1 tsp paprika
- 4 cups of tomato juice
- 1 bay leaf
- pinch of oregano
directions
Cover beans with 6 cups of water, bring to a boil, and boil for 2 minutes. Let stand for 1 hour. Fry onions and garlic in butter until golden. Add beef and cook until brown. Add beef mixture and spices to beans and simmer uncovered for about 1 1/2 hours.
