Pasta Amatriciana

ingredients

  • 1 28-oz. can good tomatoes (like Pastene)
  • 1 onion, diced
  • 6 garlic cloves, minced
  • 1/2 # prosciutto or pancetta, chopped small
  • 1 hot chili pepper, diced fine or 1 t. dry chili pepper flakes
  • 1/2 c. chopped flat leaf parsley
  • 3 T. olive oil
  • salt and pepper to taste

directions

In a heavy saute pan, heat the oil and add the prosciutto or pancetta. Sprinkle with a little salt. Cook until the onion is translucent and add the garlic. Cook for another minute, then add the chili pepper. Then cook for another minute. Add the tomatoes and parsley and bring to a boil. Simmer for 15 minutes, and taste for salt and pepper. Cover about 3/4 # of pasta.
