Dad's 3 Bean Salad

ingredients

  • 1 large can of kidney beans (approx 2 cups), drained and rinsed
  • 1 large can of white kidney beans (approx 2 cups), drained and rinsed
  • 1 large can of chick peas (approx 2 cups), drained and rinsed
  • 1 1/2 cup finely chopped onion or scallions
  • 1 teaspoon finely chopped garlic
  • 4 tablespoons finely chopped parsley
  • 1 green pepper, seeded and coarsely chopped
  • 2 teaspoons salt
  • Freshly ground black pepper
  • 6 tablespoons wine vinegar
  • 2/3 cup olive oil

directions

In large bowl, combine all beans, the chopped scallions, garlic, parsley and the chopped green pepper. Add the salt, a few grindings of pepper and the wine vinegar. Toss gently with a large spoon. Pour in the olive oil and toss again. This salad will be greatly improved it is allowed to rest for at least an hour before serving it. Serve with a slotted spoon.
