Terri's Big Salad
This salad will want to make you take a ’group duce’ on Rebecca. This is always a huge hit at the lake and everywhere else. It sure is a crowd pleaser!
ingredients
- Salad:
- 2 Hearts of romaine lettuce
- Fresh Dill (I just about 1/4 a bag of fresh dill)
- 1/2 Jar of cashews
- Feta Cheese
- Cherry tomatoes
- Red onion (not if stephen is eating it!)
- Salad Dressing:
- 2 Tablespoons olive oil
- 1 Tablespoon red wine vinegar
- 1 Tablespoon dijon mustard
- 1 Clove garlic
- 3 dashes italian seasoning
- salt and pepper
- If this taste too much like olive oil keep adding red wine vinegar and dijon mustard until you get the right taste

Dressing:

Crush garlic. Add dijon mustard, olive oil and red wine vinegar. Mix together, taste and adjust if needed.

Add italian seasoning and salt and pepper.

Salad:

Toast cashews on low heat until they’ve just barely toasted.

Rinse, dry and cut the romaine. Dice red onion, half cherry tomatoes and chop dill.

Add lettuce, dill and feta (I like a lot) first and toss. Add tomatoes, onion and cashews on top.

Next, add the dressing and lightly toss so that all of the goodness doesn’t go to the bottom.

Lastly, sprinkle any left over cashews and feta on top.

This is great with any sort or meat! I've put turkey, steak, shrimp and anything else you can think of and it only makes it better! *Craisins are good but Daniel doesn't ever let me add them
