Stay-Abed Stew


Family Circle in 1982 said this is a good recipe to make when you’re in bed with a good murdery mystery and a box of bonbons ... or when you’re sick with a good case of flu! Personally I think it’s a good recipe for Sundays in football season!

  • 2 pounds beef stew meat, cubed
  • 1 bag of frozen peas (or other veggies)
  • 1 cup sliced carrots
  • 1 chopped onion
  • 1 can cream soup (celery, mushroom or tomato) + 1/2 can water
  • 1 big raw potato, sliced
  • 1 bay leaf


Mix all ingredients in a casserole dish with a tight lid. Put in 275 degree oven and go back to bed! The stew will be ready in 5 hours.


I cook this stew in a Paul Deen porcelain-coated cast iron roaster. The weight of the lid keeps all the moisture inside and makes a fantastic stew.
