My Shrimp Louie Salad
This a a tangy salad with a variety of fresh ingredients.
ingredients
- For Salad:
- 2 heads of Romaine lettuce chopped
- 2 hard boiled eggs
- 2 Roma tomatoes chopped
- 1/2 of a cucumber sliced thin
- 1 Red bell pepper sliced thin
- 1 Avocado sliced thin
- 20 fully cooked chilled medium sized shrimp or 40 small shrimp.
- For Dressing:
- 1/2 cup light mayo
- 1/4 cup fresh lemon juice
- 1/4 cup ketchup
- 1 heaping tablespoon of capers
- 1 teaspoon sweet pickled relish

Assemble salad on separate plates. Start with the chopped romaine lettuce. Sprinkle a few chopped tomatoes on top and place a few slices of cucumber, red bell pepper and Avocado on each plate. Place 1/2 of a boiled egg on the side of each salad. Place 5 medium shrimp or 10 small shrimp on top of each salad.

In a separate bowl whisk together salad dressing ingredients. Drizzle dressing over each salad right before serving.
