Bourbon Baked Sweet Potatoes
I served this at Thanksgiving. Lionel loved it.
ingredients
- 3 1/2 pound sweet potatoes peeled and cubed
- 1/2 c packed dark brown sugar
- 2 T bourbon
- Coarse salt and pepper
- 3 T butter

Preheat oven to 350. Arrange sweet potatoes in 9 x 13 dish. (They bake down, make sure pan if full, but don’t overlap too much.) Add sugar and bourbon and toss to combine. Season with salt and pepper (I use a lot of pepper to add some heat.) Pour over the potatoes.

Bake until tender and glazed- 1 to 1-1/2 hours. Toss every 30 minutes. Stir in butter before serving.
