Orzo with Fried Shallots
This easy side dish goes well with fish and green beans.
ingredients
- 1/2 pound dried orzo pasta
- 1 tablespoon butter
- 2 shallots, peeled and slivered
- 1 clove garlic, peeled and chopped
- 1 tablespoon olive oil
- sea salt
- pepper

Cook orzo in boiling water as directed on package. Be sure not to over cook! Al dente is better for this recipe because the orzo cooks again in the sauce pan.

In a sauce pan, melt butter over medium heat. Add shallots and stir often, until they start to brown, 3 to 4 minutes. Add the garlic and stir for 1 minute. Add the cooked orzo and olive oil and stir constantly until the orzo is hot, about 2 minutes. Add sea salt and pepper to taste.
