Make Ahead Egg Casserole
Great for Brunch or breakfast for large groups!
ingredients
- 1 loaf bakery bread, cut into small cubes
- 1 package breakfast sausage
- 2 dozen eggs
- 1 red pepper
- 1 green pepper
- 1 onion
- 1 cup cheddar cheese
- 1 cup milk

Butter a 12X7 baking dish.

In a sauté pan, cook breakfast sausage and cut into small pieces. Sauté the vegetables until tender. Mix eggs and milk, add salt and pepper. Layer the bread, sausage, vegetables, and 1/2 the cheese in baking dish, pour egg mixture over top. Lightly mix together to coat all the bread wit the egg mixture. Cover and let sit up to 24 hours. In the morning, preheat oven to 300 degrees. Add remaining cheese to top, cover with tinfoil, bake 40-50 minutes. Remove tin foil, if still runny in the center, increase heat to 400 and bake another 10-15 minutes. Serve hot.
