Pizza with Chicken & Goat Cheese
So easy! Great pizza can be so much more then boring pepperoni and cheese!
ingredients
- Whole Wheat pizza dough, see recipe
- Cooking spray
- 1/4 cup bottled pesto (or homemade, see recipe)
- 1/4 tsp freshly ground black pepper
- 3/4 cup boneless, skinless, shredded rotisserie chicken
- 1/2 cup fresh sweet corn kernels
- 2 oz goat cheese, crumbled
- 2 tbs chopped fresh basil

Preheat over to 425 degrees

Lightly coat pan with cooking spray. Place pizza dough on lightly floured surface, and roll into a 12 inch circle or square depending on pan. Place dough on prepared pan and bake for 5 minutes.

Take dough out of oven, spread pesto over warm crust, leaving a 1/2inch edge. Sprinkle pepper evenly over crust, top with chicken, corn, and goat cheese. Bake 12-15 minutes or until crust is cooked through and cheese is golden brown. Remove from oven, and sprinkle with basil. Serve hot.

***Add cooked mushrooms for additional flavor.
