Honey Pecan Finger Pies
ingredients
- 1 1/4 cups all purpose flour
- 1/3 cup sugar
- 1/2 cup butter, softened
- 2/3 cup sugar
- 1/2 cup honey
- 3 tablespoons all purpose flour
- 1/4 teaspoon salt
- 2 eggs, lightly beaten
- 2 tablespoons butter, melted
- 1 1/2 teaspoons vanilla extract
- 1 cup chopped pecans

Combine 1 1/4 cups flour and 1/3 cup sugar in a bowl, cut 1/2 cup butter into flour mixture with a pastry blender until mixture resembles coarse meal. Press firmly and evenly into an ungreased 9 inch square pan. Bake at 375 for 10-15 minutes or until edges are lightly browned.

Combine 2/3 cup sugar and remaining ingredients and pour over prepared crust. Bake at 375 for 20 to 25 minutes shielding with foil the last 5 minutes. Cool on a wire rack and cut into 1 1/2 x 1 inch bars.
