Romanesco Two Ways
Romanesco is a beautiful vegetable that is similar to broccoli and cauliflower. It tastes and acts more like cauliflower, but is sweeter and turns greenish when cooked. Both ways are fairly similar and great; the Roasted Romanesco requires garlic and olive oil, while the Steamed Romanesco does not.
ingredients
- 1 head of Romanesco or cauliflower, cut into bite-size pieces
- 2 cloves of garlic, minced (for Roasted Romanesco)
- Juice of one lemon, freshly squeezed
- 2-3 T olive oil (for Roasted Romanesco)
- salt and freshly ground black pepper to taste
- 1/2 cup freshly grated Parmesan cheese
- 1/4 cup chopped parsley
